Baked Tomatoes with Pesto

Ingredients

  • Basil leaves 3 cups
  • Garlic 2 cloves
  • Pine nuts ¼ cup
  • Dry yeast 0 oz
  • Olive Oil ½ cup
  • Tomatoes 4 pieces
  • Breadcrumbs 5½ tablespoons

Step-by-Step Guide

Step 1

Place the basil and garlic in a food processor and chop finely.

Step 2

Add the pine nuts and nutritional yeast, and blend for 1 minute until a paste consistency is achieved.

Step 3

Add the olive oil.

Step 4

Continue mixing until smooth. Season with salt and pepper to taste.

Step 5

Preheat the oven. Arrange the tomatoes on a baking sheet cut side up.

Step 6

Spread 2 teaspoons of pesto on each half and sprinkle with 2 teaspoons of panko breadcrumbs.

Step 7

Bake for 3–5 minutes until the breadcrumbs are golden brown and the pesto is bubbling.

Step 8

Serve as an appetizer.
