Baked Sweet Peppers Odessa Style
Appetizers • Ukrainian
Description
You can, of course, peel the peppers (place them hot in a plastic bag and seal tightly for about 15 minutes), but in this case, I never peel them — they turn out delicious and disappear instantly.
Ingredients
- Sweet Pepper 0 lbs
- Mild Chili Spice 1 piece
- Herbs 1 bunch
- Garlic 1 head
- Vegetable Oil 5 fl oz
- Vinegar essence 0 fl oz
- Sugar to taste
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Place sweet peppers, preferably in different colors, and 1-3 chili peppers on a baking tray lined with parchment paper, and bake in a preheated oven at 390°F until browned.
Step 2
While the peppers are roasting, we prepare the marinade. Combine the cold oil and vinegar, heat the mixture, and as soon as it starts to boil, add the garlic and a mix of herbs (I used cilantro, parsley, and celery). Let it boil once more and then immediately turn off the marinade.
Step 3
Add salt, pepper, and sugar to the marinade to taste.
Step 4
If the pepper is regular, large bell pepper, it's better to cut it into quarters (be sure to save the juice). In my case, I used small sweet peppers and didn't cut anything.
Step 5
Immediately pour the peppers over, cool them down, and store in the refrigerator, unless, of course, they are eaten right away!
