- Salad Potatoes 4 pieces
- Broccoli ¼ cup
- Bacon 4 slices
- Cheshire Cheese 0 oz
- Scallions 2 pieces
- Sour Cream 5 tablespoons
- Milk ¼ cup
- Salt 1 teaspoon
Step-by-Step Guide
Step 1
Boil the potatoes in salted water, unpeeled, until cooked. Slightly cool and make a cross cut on the skin at the top. Carefully scoop out the flesh without damaging the skin.
Step 2
Preheat the oven to 390°F.
Step 3
In a bowl, mash the flesh and mix it with finely chopped broccoli, grated cheese, finely chopped bacon, finely chopped green onions, sour cream, milk, and salt. Mix well and fill the potato skins. Place on a baking sheet and bake for 30 minutes.
