Baked stuffed bell peppers with cherry tomatoes, feta, and thyme
Ingredients
- Orange Bell Peppers 2 pieces
- Marinated cherries 5 oz
- Feta cheese 0 oz
- Fresh basil leaves 8 pieces
- Chopped Sage Leaves 1 teaspoon
- Ground Black Pepper to taste
- Olive Oil 1 tablespoon
Step-by-Step Guide
Step 1
Preheat the oven to 390°F.
Step 2
Cut the peppers in half lengthwise and remove the seeds. Place them on a baking sheet cut side up.
Step 3
In a bowl, mix the cherry tomatoes, crumbled feta, thyme, and chopped basil. Season with salt and pepper. Fill the peppers with the mixture and drizzle with olive oil.
Step 4
Cover with a sheet of foil and bake in the oven for 30 minutes until tender.
Step 5
Remove the foil and let them brown for about 15 minutes. Serve warm.
