Step-by-Step Guide
Step 1
Preheat the oven to 355°F. Wash the potatoes and bake for 1 hour until they are soft. Then cut them lengthwise and scoop out the flesh with a spoon, being careful not to damage the skin. Pass the flesh through a blender to make a smooth puree. Transfer to a bowl, add the butter, cheese, beaten egg, freshly grated nutmeg, and salt. Pour in enough hot milk to achieve a thick puree.
Step 2
Fill the skins with this puree and cook under the grill for 15 minutes until a golden crust forms. Serve immediately.
