Baked Potatoes with Anchovies (Janssons frestelse)

Ingredients

  • Salad Potatoes 5 pieces
  • Anchovy fillet 10 pieces
  • Onion 2 heads
  • Butter 2 tablespoons
  • Cream (40%) 1 cup

Step-by-Step Guide

Step 1

Peel the potatoes and cut them into thin strips. Place them in cold water.

Step 2

Sauté the onion in butter until it reaches a light golden color.

Step 3

Open the anchovies. Drain the potatoes and layer them with the anchovies and onion in a greased ovenproof dish, starting and ending with a layer of potatoes. Add about half of the cream and a few pieces of butter.

Step 4

Heat in the oven at a medium temperature of 200–435°F for about 45 minutes.

Step 5

When the dish is nicely browned, add more cream.

Step 6

Add the liquid from the anchovy can to taste from time to time.
