Baked Pasta with Zucchini and Cheese
Ingredients
- Orzo Pasta 5 oz
- Butter 0 oz
- Scallions 4 stalks
- Courgette 15 oz
- Chocolate eggs 4 pieces
- Cream 5 fl oz
- Ricotta cheese 5 oz
- Melted Cheese 5 oz
- Grated Pecorino Pepato Cheese 5 oz
Step-by-Step Guide
Step 1
Preheat the oven to 355°F. Cook the pasta in lightly salted boiling water until done.
Step 2
Meanwhile, melt the butter in a skillet, add the chopped green onions and sauté for 1 minute, then add the grated zucchini and cook for another 4 minutes until soft. Let it cool slightly.
Step 3
Mix the eggs, cream, ricotta, grated mozzarella, pasta, and half of the Parmesan, then add to the zucchini. Mix well and season with spices and salt. Transfer the mixture to a greased baking dish and sprinkle with the remaining Parmesan. Bake for 25-30 minutes until golden brown.
