
Baked Pasta with Butternut Squash and Mushrooms under a Cheese Crust

Ingredients
- Butternut Squash 1 piece
- Fresh Mushrooms 10 oz
- Salt to taste
- Ground Black Pepper to taste
- Olive Oil 1 tablespoon
- Penne rigate 5 oz
- Crème fraîche 5 fl oz
- Breadcrumbs 0 oz
- Grated Pecorino Pepato Cheese 0 oz
Step-by-Step Guide
Step 1
Preheat the oven to 390°F.
Step 2
Peel the butternut squash and remove the seeds, then cut it into 1 cm cubes. Cut the mushrooms into the same size. Transfer everything to a baking dish, season with salt and pepper. Drizzle with olive oil, mix, and place in the oven for 30 minutes until tender and slightly browned.
Step 3
Meanwhile, cook the pasta in boiling salted water until al dente. Drain.
Step 4
Remove the squash and mushrooms from the oven and transfer to a large bowl. Preheat the broiler in the oven.
Step 5
Add the pasta, crème fraîche, and half of the parmesan to the squash. Season with salt and pepper. Transfer to a baking dish, sprinkle with breadcrumbs and the remaining parmesan. Place under the broiler for a while until a golden crust forms.
