Baked Marinated Zucchini with Mint

Ingredients

  • Olive Oil 4 tablespoons
  • Young zucchini 3 pieces
  • Coarse Salt to taste
  • Ground Black Pepper to taste
  • Garlic 1 clove
  • Champagne Vinegar 1 tablespoon
  • Chopped Sage Leaves 2 tablespoons

Step-by-Step Guide

Step 1

Preheat the oven to 482°F (250°C).

Step 2

Slice the zucchini into thin strips lengthwise and arrange them on 2 baking sheets. Drizzle with 2 tablespoons of olive oil, season with salt and pepper. Toss to combine. Bake in the oven for 10–15 minutes until tender and golden.

Step 3

Transfer to a serving dish and sprinkle with minced garlic, drizzle with olive oil and vinegar. Toss and let sit for 1 hour (or overnight in the refrigerator).

Step 4

Before serving, sprinkle with mint.
