- Eggplants 2 pieces
- Olive Oil to taste
- Passata Tomato Sauce 15 fl oz
- Herbes de Provence to taste
- Grated Pecorino Pepato Cheese 5 oz
Step-by-Step Guide
Step 1
Preheat the oven to 390°F. Slice the eggplants into thin pieces and arrange them in a baking dish. Brush with olive oil and sprinkle with herbs. Cover with foil and bake for 15-20 minutes until soft.
Step 2
Remove the foil and spread the tomato sauce over the eggplants. Sprinkle with parmesan cheese on top. Drizzle with olive oil and bake in the oven until golden brown.
