Baked eggplants with garlic and breadcrumbs
Ingredients
- Salt to taste
- White bread 0 oz
- Garlic 3 cloves
- Parsley 7 stems
- Olive Oil 5 fl oz
- Eggplants 6 pieces
Step-by-Step Guide
Step 1
Cut the eggplants lengthwise, sprinkle with salt, and place them in a colander skin side up. Leave for an hour to drain the bitter juice. Rinse the eggplants and pat dry.
Step 2
Heat three-quarters of the oil in a large skillet, lay the eggplants in a single layer skin side up, and cook over medium heat for 30 minutes until they are soft.
Step 3
Tightly arrange the eggplants skin side up in a baking dish. Mix finely chopped parsley and garlic and sprinkle them over the eggplants. Top with breadcrumbs and drizzle with the remaining oil.
Step 4
Bake for 10 minutes at 390°F. Serve immediately in the same dish.
