Baked Corn with Indian Sauce

Ingredients

  • Sweet Corn Sticks 4 pieces
  • Olive Oil 2 tablespoons
  • Onion 1 piece
  • Garlic 1 clove
  • Sugar 1 teaspoon
  • Turmeric a pinch
  • Grated Ginger Root 1 tablespoon
  • Ground Cumin a pinch
  • Mild Chili Spice a pinch
  • Red Curry Powder 1 teaspoon
  • Salt to taste
  • Natural Yogurt 5 fl oz
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Preheat the oven to 430°F. Brush the corn cobs with olive oil (1 tablespoon), sprinkle with salt and pepper. Place in a baking dish and bake for 15 minutes. Then reduce the temperature to 355°F and bake for another 20 minutes. Turn the cobs a couple of times during baking.

Step 2

Place a small saucepan over low heat, pour in 1 tablespoon of oil, add finely chopped small onion, garlic, and a small piece of ginger. Then add turmeric, cumin, chili powder, curry leaves, salt, and pepper. Cook for about 10–12 minutes, stirring occasionally, until the onion becomes soft. Allow the mixture to cool slightly and stir in the yogurt. Warm over low heat, stirring, for a couple of minutes until the sauce is warm.

Step 3

Drizzle the sauce over the corn and serve.
