Baked chicory with Roquefort

Ingredients

  • Chicory 4 pieces
  • Onion 1 head
  • Sour Cream 5 oz
  • Raisins 5 oz
  • Roquefort cheese 5 oz
  • Butter 0 oz
  • Apple Cider Vinegar 5 tablespoons
  • Honey 1 tablespoon
  • Salt ½ teaspoon

Step-by-Step Guide

Step 1

Remove the colorless leaves from the chicory and cut it in half.

Step 2

Peel and dice the onion.

Step 3

Melt half of the butter in a wide skillet and sauté the onion until golden.

Step 4

Add the raisins and, stirring constantly, heat for about another minute until the raisins soften slightly.

Step 5

Add the vinegar and half a teaspoon of salt, and continue stirring until the vinegar evaporates.

Step 6

Transfer everything to a deep baking dish.

Step 7

Return the skillet to the heat, melt the remaining butter, place the chicory cut side down, and sauté until golden brown, then transfer to the baking dish cut side up and brush with honey.

Step 8

Mash the blue cheese.

Step 9

Preheat the oven to 180 °C.

Step 10

Pour 3 tablespoons of water into a small saucepan, add the sour cream and mashed cheese, bring to a boil, and pour the resulting mixture over the chicory.

Step 11

Cover the baking dish with foil and place it in the oven for 35 minutes.
