  • Olive Oil 2 spoons
  • Cauliflower 10 oz
  • Coarse Salt to taste
  • Ground Black Pepper to taste
  • Spelt 10 oz
  • Celery stalk 1 piece
  • Scallions 0 oz
  • Meyer Lemon Juice 1 tablespoon
  • Truffle Oil 1 tablespoon
  • Grated Pecorino Pepato Cheese 0 oz

Step-by-Step Guide

Step 1

Preheat the oven to 430°F. Break the cauliflower into florets and toss them in a bowl with olive oil, seasoning with salt and pepper to taste. Spread them out on a baking sheet lined with parchment paper and roast for twenty to twenty-five minutes.

Step 2

In a pot, bring water to a boil and add half a teaspoon of salt. Stir in the spelt and add a celery stalk. Cook for forty minutes until tender, then drain in a colander, allowing the liquid to drain off and dry, and discard the celery stalk.

Step 3

Gently mix the slightly cooled spelt with chopped green onions, lemon juice, and truffle oil. Finally, add the roasted cabbage and sprinkle everything with grated Parmesan.
