
Baked Avocados with Tomatoes in Egg-Cream Sauce

Ingredients
- Avocado 2 pieces
- Olive Oil 1 tablespoon
- Tomatoes 2 pieces
- Whole egg 2 pieces
- Grated Pecorino Pepato Cheese 2 tablespoons
- 10% cream 5 fl oz
- Butter 0 oz
- Salt to taste
- Meyer Lemon Juice 1 tablespoon
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Cut the tomatoes into quarters, remove the seeds and juice, and dice the flesh.
Step 2
In a bowl, whisk the yolks with the chilled cream, add half a teaspoon of lemon juice, and continue whisking. Then gradually pour in the melted butter, adding salt and pepper to taste.
Step 3
Scoop out pieces of avocado flesh and place them in a baking dish.
Step 4
Season with salt and pepper and drizzle with lemon juice.
Step 5
Top with the diced tomatoes, pour over the sauce, sprinkle with Parmesan, and place under a well-heated grill until golden brown (about 15–20 minutes). Serve immediately.
Step 6
Cut the avocado in half. Remove the pit. Brush the surface with olive oil. Place in a preheated oven at 355°F for 15–20 minutes.
Step 7
Remove from the oven and let cool slightly.
