Baked Artichokes
Ingredients
- Salt to taste
- White bread 0 oz
- Parsley 3 stems
- Safflower Oil 1 tablespoon
- Dry White Wine 4 tablespoons
- Artichoke bottoms 12 pieces
- Lemon 1 piece
Step-by-Step Guide
Step 1
Cut the lemon in half and squeeze the juice of one half into a large bowl of water. Trim the stems of the artichokes and remove the tough outer leaves. Trim the tips of the remaining leaves. Cut the artichokes in half lengthwise and remove the choke. Drizzle the artichokes with the juice of the remaining lemon half and place them in the lemon water.
Step 2
Bring salted water to a boil in a large pot, add the artichokes, and bring back to a boil. Reduce the heat, cover, and simmer for 30-60 minutes until they are tender. (Try gently pulling off a leaf – it should come off easily).
Step 3
Place the artichokes cut side up in a baking dish. Drizzle with wine. Drizzle with oil and sprinkle with finely chopped parsley and breadcrumbs. Bake for 15 minutes at 355°F and serve immediately in the same dish.
