Baguette with Garlic Butter

Ingredients

  • Water 5 fl oz
  • Milk 5 fl oz
  • Salt 1 teaspoon
  • Sugar 1 tablespoon
  • Wheat Flour 10 oz
  • Dry yeast 1½ teaspoons
  • Butter 5 oz
  • Olive Oil 1 teaspoon
  • Garlic 4 cloves
  • Herbs to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Mix all the ingredients for the dough (everything except the butter) and knead. Cover with a towel and place in a warm spot for 1 hour. The dough should double in size. (Honestly, I don't remember exactly, but I think I needed much more flour; the dough should not stick to your hands).

Step 2

For the filling, mix the herbs with the oils, add garlic and pepper (the recipe calls for 2 cloves of garlic, but I like it more garlicky, so I used 4), and mix until smooth. (The butter can be melted or used at room temperature).

Step 3

Knead the risen dough again on a floured surface. Shape it into a flat round and roll it into a log. Optionally, divide the dough into several pieces (it cooks faster and bakes better; I made 2 baguettes) and shape them into smaller baguettes.

Step 4

Place the baguette on a baking sheet lined with parchment paper. Cover with a towel and let it rest for 30 minutes. Then make slashes on the baguette across and one lengthwise (I also brushed it with beaten egg white). Bake for 10 minutes at 355°F.

Step 5

Remove from the oven. Cut the loaf along the slashes halfway through. Fill the cuts with garlic butter (I used a silicone brush; I had many slashes). Bake for another 15-20 minutes until golden brown.
