Baba Ganoush with Tahini
Ingredients
- Eggplants 5 pieces
- Tahini 3 tablespoons
- Meyer Lemon Juice 1 teaspoon
- Garlic 4 cloves
- Olive Oil 3 tablespoons
- Salt to taste
Step-by-Step Guide
Step 1
Roast the eggplants either in the oven or directly on the burner. Roasting on an open flame gives a smoky flavor. Prick the eggplant in several places with a toothpick, place it over the fire, and roast, turning it by the stem. The roasting time is about 5–6 minutes. Check with a toothpick — the eggplant should be soft.
Step 2
Then, peel the eggplants, and mash the flesh in a blender until it reaches a puree consistency. Add salt, lemon juice, minced garlic, and tahini.
Step 3
Drizzle with olive oil on top.
Step 4
Serve with pita or lavash.
