Description
The famous Azerbaijani egg dish Kükü is one of the best variations of an egg dish: it is quite similar to an Italian frittata and a French herb omelet, but due to the significantly higher proportion of herbs in the recipe, it offers a much more intriguing flavor profile.
Ingredients
- Ground coriander 0 oz
- Spinach 5 oz
- Parsley 0 oz
- Scallions 0 oz
- Fresh Mint 0 oz
- Chicken Egg 8 pieces
- Natural Yogurt 10 oz
- Thyme to taste
- Marinated cherries 10 oz
- Butter 0 oz
- Garlic 2 cloves
Step-by-Step Guide
Step 1
Prepare the necessary ingredients.
Step 2
Wash the spinach leaves, remove the stems if they are too tough, and then chop them finely. There should be about three times as much spinach as the other greens.
Step 3
Remove the leaves from the stems of the parsley and cilantro, and chop them as well.
Step 4
Do the same with the mint leaves; you can remove the white parts of the green onions and chop them as well.
Step 5
Take a pinch of thyme leaves and mix them with yogurt and lightly beaten eggs.
Step 6
Season the mixture with salt and pepper, then add all the chopped herbs.
Step 7
Drizzle cherry tomatoes (optional step) with olive oil and place in the oven for 20 minutes.
Step 8
In a deep skillet, lightly sauté the finely chopped garlic in melted butter. Pour the mixture of eggs, yogurt, and herbs into the same skillet and place it in the oven at 355°F for about 15–20 minutes.
Step 9
Garnish the finished green kuku omelet with roasted tomatoes.
Step 10
Serve. By the way, you can mix the tomatoes into the herb mixture before baking, but then they will disrupt the color harmony of the kuku.
