Step-by-Step Guide

Step 1

Cut the avocado in such a way that the pit remains intact in the center, with a thickness of about 1 cm.

Step 2

Sauté the avocado in a skillet, cracking an egg into the hollow left by the pit.

Step 3

Mash the remaining avocado with a fork and add lemon juice.

Step 4

Prepare the tomato emulsion: grill the cherry tomatoes, melt the butter, and mix it with lemon juice, season with salt, and add water.

Step 5

Chop the grilled cherry tomatoes and mix them with the oil emulsion.

Step 6
