Description
Authentic Caesar salad dressing
Ingredients
- Chicken Egg 1 piece
- Garlic 2 cloves
- Anchovies 3 pieces
- Capers 1 tablespoon
- Salt 1 tablespoon
- Citrus Zest Mix 1 tablespoon
- Meyer Lemon Juice 1 tablespoon
- Ground Black Pepper 1 tablespoon
- Worcestershire Sauce 1 tablespoon
- Olive Oil 5 fl oz
- Dijon Mustard 1 tablespoon
Step-by-Step Guide
Step 1
Prepare all the ingredients.
Step 2
Mash the anchovy fillets, capers, and garlic in a mortar together with salt. If you prefer a milder flavor, you can use just one clove of garlic.
Step 3
Place the mustard in a bowl.
Step 4
Add the yolk and begin to whisk.
Step 5
Gradually, drop by drop, start adding olive oil while continuing to whisk. Once the mixture begins to thicken, you can add the oil more boldly.
Step 6
Whisk until a stable emulsion forms.
Step 7
Add lemon juice, ground pepper, and Worcestershire sauce. Mix well.
Step 8
Incorporate the mixture from the mortar into the sauce.
Step 9
Add the lemon zest and mix well. If the mixture is too thick, add a little water.
Step 10
Dress the Caesar salad with part of the sauce and serve the remaining sauce on the side in a sauce boat, so that everyone can add as much as they like.
