Description

Aspic pike can be served with red cabbage, <a href="https://eda.ru/recepty/salaty/kartofelnij-salat-s-jajcami-tuncom-15661">potato salad</a>, fresh and pickled cucumbers, as well as <a href="https://eda.ru/video/sousy/kak-prigotovit-majonez-82">mayonnaise</a>.

Ingredients

  • Fish 5 lbs
  • Gelatin 0 oz
  • Onion 1 piece
  • Root Vegetables 1 piece

Step-by-Step Guide

Step 1

Cut the cleaned and washed pike into pieces.

Step 2

Place the bones, head without gills, trimmings, and roe into a pot, add root vegetables, onion, salt, and bay leaves (1-2 leaves), cover with water, and bring to a boil.

Step 3

After 15-20 minutes, add the pieces of pike to the same pot for cooking.

Step 4

Once the fish pieces are cooked, remove them with a slotted spoon, arrange them on a platter in the shape of a whole fish, leaving small gaps between the pieces, and place the platter in a cool place.

Step 5

Strain the fish broth and prepare 2 to 2.5 cups of jelly by dissolving the soaked gelatin in it, bringing it to a boil, and straining through a cloth.

Step 6

Garnish each piece of pike with slices of lemon, carrot cut into star shapes, a sprig of greenery, and pour the prepared jelly over in two to three batches to prevent the decorations from shifting and to ensure the pike pieces are covered with jelly.

Step 7

Keep the dish in a cool place until the jelly sets (this will take at least 4 hours).
