Description
Aspic is a traditional dish made from meat stock that is gelatinous when cooled. Ingredients
- Pork Neck ½ kg
- Beef 0 lbs
- Turkey ½ kg
- Garlic 3 cloves
- Onion 2 heads
- Bay leaf 5 pieces
- Green peppercorns 10 pieces
- Salt to taste
Step-by-Step Guide
Step 1
Place the pork leg, beef, and turkey thigh in a pot and cover with about 5 liters of water. Bring to a boil over medium heat, skimming off any foam that rises to the surface. Add salt and onion. Reduce the heat and simmer for 7 hours. Towards the end of cooking, add bay leaf and pepper.
Step 2
After boiling, separate the meat from the bones and chop it into small pieces. Mix the meat and spread it in molds in a 2 cm layer. Pour the remaining broth over the molds and add finely chopped garlic.
Step 3
Place in the refrigerator for a few hours until set. Serve with horseradish.
