Step-by-Step Guide
Step 1
Peel the asparagus using a vegetable peeler. Blanch for 30 seconds, then break it into strands by hand to create a pasta-like texture.
Step 2
To prepare the sauce, pour the wine into a slightly heated skillet and reduce it. Add the cheeses in the following order: gorgonzola, grana padano, mozzarella, double cream. Add the cream and bring everything to a uniform consistency over low heat.
Step 3
On a plate, arrange the asparagus strands to form a nest. Pour the four cheese sauce over it and place a poached egg in the nest.
