Description

A light vegetable appetizer with enough character to stand alone as a dish. If you prefer a bit more heat and spice, black pepper can be substituted with chili pepper.

Ingredients

  • Asparagus 4 stalks
  • Onion ½ heads
  • Garlic 1 clove
  • Tomatoes 1 piece
  • Parmesan Cheese 0 oz
  • Olive Oil 1 tablespoon
  • Salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Pour a tablespoon of olive oil into a skillet preheated over medium heat.

Step 2

Use a vegetable peeler to remove the tough skin from the asparagus spears, then slice them lengthwise into thin strips resembling tagliatelle. Sauté for about two minutes until they become slightly tender, then transfer to a plate.

Step 3

Finely chop half of a small onion and a clove of garlic, then sauté them in the same pan until golden brown.

Step 4

Place a medium-sized tomato in boiling water for half a minute, then transfer it to ice water. After that, peel off the skin and chop the flesh very finely, almost to a puree consistency, and add it to the pan.

Step 5

Season the sauce with salt and ground black pepper to taste, and bring it to a boil.

Step 6

As soon as the sauce comes to a boil, return the asparagus to the skillet and sprinkle with grated Parmesan.

Step 7

After twenty seconds, remove the skillet from the heat, place the asparagus on a plate, drizzle with sauce, sprinkle with black ground pepper, and serve.
