- Green Tagliatelle Pasta 10 oz
- Asparagus 10 oz
- Garlic 4 cloves
- Dried Chili Pepper 2 pieces
- Olive Oil 0 fl oz
- Butter 0 oz
- Parmesan Cheese 0 oz
- Lemon 1 piece
Step-by-Step Guide
Step 1
Cook the pasta in a pot of boiling salted water according to the package instructions.
Step 2
Meanwhile, trim the woody ends off the asparagus and discard them, then slice the asparagus diagonally, leaving the tips whole.
Step 3
Peel and finely chop the garlic, crumble the dried chili pepper, and add them to a large skillet over medium heat with the olive oil.
Step 4
When the garlic starts to sizzle, add the asparagus. Allow it to sauté, then add a spoonful of pasta water, cover, and simmer on low heat until the pasta is al dente.
Step 5
Using tongs, transfer the pasta directly into the skillet with the asparagus, adding some starchy cooking water.
Step 6
Turn off the heat, then grate the Parmesan and stir until the fat, cheese, and liquid turn into a creamy sauce. If necessary, thin with a small amount of the reserved pasta cooking water.
Step 7
Taste and season to perfection, then plate up.
Step 8
Finally, sprinkle with grated Pecorino cheese and a little lemon zest to taste.
