Asparagus Frittata
Breakfasts • Italian
Description
A frittata is a hybrid of a pie and an omelet. It is thoroughly fried until a brown crust forms.
Ingredients
- Asparagus 10 oz
- Spanish onions 0 oz
- Chicken Egg 4 pieces
- Olive Oil 2 spoons
- Milk 0 fl oz
- Parmesan Cheese 0 oz
- Ground Black Pepper to taste
- Salt to taste
Step-by-Step Guide
Step 1
Slice the tips of the asparagus into rounds about five millimeters thick.
Step 2
Slice the white onion into half-moons.
Step 3
In a skillet, heat olive oil and sauté the onion briefly, then add the asparagus. Stir and cook, stirring occasionally, for five to seven minutes, until the asparagus is tender.
Step 4
Crack the eggs into a bowl. Add grated Parmesan cheese, pour in the milk (or cream), season with salt, and whisk with a fork. Pour the mixture over the asparagus and let it sit for about seven to ten minutes.
Step 5
When the frittata is set, flip it onto a deep plate or an inverted lid (it's easier to slide it onto a curved surface) and return it to the skillet with the browned side facing up. Let it cook in the skillet for another three minutes.
