Arugula and Walnut Pesto
Ingredients
- Arugula 5 oz
- Walnuts 0 oz
- Olive Oil ½ cup
- Grated Pecorino Pepato Cheese 0 oz
- Garlic 6½ cloves
- Salt ½ teaspoon
Step-by-Step Guide
Step 1
Heat a skillet over medium heat. Add 6 cloves of garlic, unpeeled. Sauté until golden brown. Cool and peel.
Step 2
Reheat the skillet and toast the walnuts until golden brown. Cool.
Step 3
In a blender, combine the arugula leaves, removing the stems, walnuts, finely chopped roasted garlic, and minced 0.5 clove of fresh garlic. Add salt and blend until smooth.
Step 4
Gradually add the olive oil, blending again. Transfer the pesto to a bowl and add the Parmesan. Mix well.
