  • Meyer Lemon Juice 0 fl oz
  • Artichoke bottoms 4 pieces
  • Garlic 2 cloves
  • Oregano 0 fl oz
  • Ground coriander 0 fl oz
  • Ground Cumin 0 fl oz
  • Mild Chili Spice a pinch
  • Champagne Vinegar 0 fl oz
  • Olive Oil 0 fl oz

Step-by-Step Guide

Step 1

Pour lemon juice into a large bowl of cold water. Clean the artichokes by cutting the stem 5 cm from the artichoke and removing the old leaves. Trim a quarter of the top leaves from each artichoke. Cut each one in half, then cut each half again. Use a teaspoon to scoop out the heart, then place them in the prepared water to maintain color during cooking.

Step 2

Bring a large pot of water to a boil, add the artichokes and a teaspoon of salt. Cook for 20 minutes until tender. Cooking time may vary depending on the size of the artichokes.

Step 3

Mix finely chopped garlic, oregano, cumin, coriander, and chili. Season with salt and add vinegar. Mix well and, while continuing to whisk, slowly add the oil. This can be done in a blender.

Step 4

Arrange the artichokes in a row on a plate. Top with the vinaigrette and let cool.
