Artichoke Hearts Poached in Broth

You can serve the artichokes with vegetables or, mixed, with mushrooms.
Ingredients
- Onion 0 oz
- Chicken Broth 1 cup
- Scallions 1 bunch
- Carrot ¼ piece
- Ham 2 pieces
- Butter 3 tablespoons
- Salt ¼ teaspoon
- Marinated mini artichokes 20 oz
Step-by-Step Guide
Step 1
Melt 1 tablespoon of butter in a skillet and lightly sauté the finely chopped onion and green onion, grated carrot, and finely chopped ham.
Step 2
In a deep skillet, bring the broth to a boil and add the sautéed onion mixture, butter, and salt. Then add the artichokes, cover with a lid, and bring to a boil again. Reduce the heat and cook for another 7-8 minutes until the artichokes are tender.
Step 3
Remove the lid and turn off the heat. Serve, garnished with parsley.
