
Aromatic Mango Sauce in Indian Style

Ingredients
- Mango 1 piece
- Onion 3 heads
- Carrot 1 piece
- Passata Tomato Sauce 1 teaspoon
- Tomatoes 3 pieces
- Lemon ½ piece
- Garlic 2 cloves
- Turmeric 1 teaspoon
- Grated Ginger Root 1 tablespoon
- Salt to taste
- Vegetable Oil 4 tablespoons
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Heat the vegetable oil well in a saucepan.
Step 2
Peel the onion, finely chop it, add to the saucepan, and fry until golden brown.
Step 3
Add the peeled and grated carrot and fry with the onion for a couple of minutes.
Step 4
Add turmeric, stir, and fry, stirring for 3–5 minutes.
Step 5
Add the grated tomatoes (without skin) and simmer for 10–15 minutes over low heat, stirring.
Step 6
Then add ginger, garlic, and finely chopped lemon with the peel (remove the seeds).
Step 7
Peel the mango and cut it into small cubes. Add to the saucepan, mix, and simmer until soft (you can add a spoonful of tomato paste or ketchup for color). Season with salt to taste.
