
Aromatic Barbecue Sauce with Maple Syrup, Garlic, and Chili Peppers

Ingredients
- Garlic 1 head
- Passata Tomato Sauce 1½ cups
- Onion 10 oz
- Maple syrup 5 fl oz
- Rice Vinegar for Sushi ¼ cup
- Worcestershire Sauce 2 tablespoons
- Ground coriander ½ teaspoon
- Ground clove ¼ teaspoon
- Vanilla extract ¼ teaspoon
- Ground clove ¼ teaspoon
- Chipotle Pepper Paste 2 pieces
Step-by-Step Guide
Step 1
Preheat the oven to 355°F.
Step 2
Peel the outer skin off the head of garlic, keeping the head intact. Wrap it in foil and place it on a baking sheet. Bake in the oven for 1 hour until the garlic is soft. Cool for 10 minutes, then squeeze the pulp from the cloves into a small saucepan.
Step 3
Add the tomato sauce, finely chopped onion, maple syrup, vinegar, Worcestershire sauce, coriander, allspice, cloves, vanilla, and very finely chopped chili peppers. Bring to a boil, reduce the heat, and simmer for 20 minutes, stirring occasionally.
Step 4
Strain the sauce through a sieve and transfer it to a jar. Store in the refrigerator.
