Ingredients

  • Garlic 1 head
  • Passata Tomato Sauce 1½ cups
  • Onion 10 oz
  • Maple syrup 5 fl oz
  • Rice Vinegar for Sushi ¼ cup
  • Worcestershire Sauce 2 tablespoons
  • Ground coriander ½ teaspoon
  • Ground clove ¼ teaspoon
  • Vanilla extract ¼ teaspoon
  • Ground clove ¼ teaspoon
  • Chipotle Pepper Paste 2 pieces

Step-by-Step Guide

Step 1

Preheat the oven to 355°F.

Step 2

Peel the outer skin off the head of garlic, keeping the head intact. Wrap it in foil and place it on a baking sheet. Bake in the oven for 1 hour until the garlic is soft. Cool for 10 minutes, then squeeze the pulp from the cloves into a small saucepan.

Step 3

Add the tomato sauce, finely chopped onion, maple syrup, vinegar, Worcestershire sauce, coriander, allspice, cloves, vanilla, and very finely chopped chili peppers. Bring to a boil, reduce the heat, and simmer for 20 minutes, stirring occasionally.

Step 4

Strain the sauce through a sieve and transfer it to a jar. Store in the refrigerator.
