Arishta with Vegetables
Pasta and Pizza • Armenian
Description
This recipe was shared by the head chef of a popular American restaurant, Jane Smith. Arishta is a special Armenian noodle or pasta, and the word 'arishta' translates from Armenian as 'ribbon.' In Armenia, the dough for arishta is made from coarsely ground flour, rolled out, and cut into thin noodles. In cooking, arishta is used as a side dish for meat dishes, as well as for preparing special pilaf or soup. Traditionally, the recipe for arishta has been passed down from generation to generation in each family, resulting in many variations of Armenian arishta noodles.
