Apricot Sauce with Fig and Spices

Ingredients

  • Grated Ginger Root 0 oz
  • Nigella Seeds ¼ teaspoon
  • Cardamom 3 pieces
  • Rooibos Tea Bags 2 pieces
  • Dried Apricots 5 oz
  • Sugar ¼ cup
  • Black Fig 0 oz
  • Natural Yogurt to taste

Step-by-Step Guide

Step 1

In a saucepan, combine 2 cups of water, thinly sliced small ginger root, fennel, and cardamom. Bring to a boil and add the tea bags. Remove from heat and let steep for 3 minutes. Remove the tea bags.

Step 2

Add the halved dried apricots, quartered figs, and sugar. Return to heat and simmer, partially covered, on low heat until soft and syrupy, about 20–25 minutes.

Step 3

Serve warm with Greek yogurt.
