We wash the apples. We peel them (though if the skin is not too tough, you can leave it on) and grate them using a coarse grater or a blender.

Step 2

Combine the apples with sugar and eggs.

Step 3

Add the vanilla and the baking soda with the flour. Gradually incorporate the flour until the dough reaches the consistency of thick sour cream.

Step 4

Heat the skillet, but not too high. The pancakes should not burn and should cook through properly. Fry small pancakes in butter or vegetable oil (you can use a tablespoon to scoop the batter).
