Ingredients

  • Herbed Tofu 30 oz
  • Soy Sauce 2 tablespoons
  • Vegetable Oil 2 tablespoons
  • Orange Bell Peppers 2 pieces
  • Peanut Butter 3 tablespoons
  • Sweet Chili Sauce 1 tablespoon
  • Lime Juice 2 tablespoons
  • Brown Sugar 1 tablespoon
  • Cilantro to taste

Step-by-Step Guide

Step 1

Preheat the oven to 445°F.

Step 2

Cut the tofu into medium rectangles.

Step 3

In a container, mix 1 tablespoon of vegetable oil and soy sauce. Dip the tofu slices in the sauce on all sides and place them on baking sheets greased with the remaining vegetable oil.

Step 4

Remove the seeds from the peppers and cut them into thin strips. Arrange them next to the tofu.

Step 5

Bake in the oven for 10 minutes, flip, and roast for another 10–15 minutes until the tofu is golden and the skin of the peppers is slightly charred.

Step 6

In a small saucepan over low heat, combine the peanut butter, lime juice, chili sauce, brown sugar, 3 tablespoons of water, and the remaining soy sauce. Heat until warm.

Step 7

Transfer the tofu and peppers to a serving dish and drizzle with the sauce. Garnish with cilantro and serve.
