Step 1
Grate the zest from 2 limes using a fine grater. Transfer to a bowl. Remove the seeds from the chili and finely chop it—add it to the zest. Add the shrimp, mix well, cover with plastic wrap, and refrigerate for 1 hour.
Step 2
Meanwhile, in a small bowl, mix the mayonnaise, wasabi paste, finely chopped green onion, rice vinegar, the grated zest of the remaining lime, and the juice of 0.5 lime. Mix well and transfer to a small serving bowl.
