
Anchovies in Marinade

Description
Instead of white wine vinegar, you can use freshly squeezed lemon juice. This recipe is also suitable for marinating sprats or small herring.
Ingredients
- Anchovy fillet 16 pieces
- Champagne Vinegar 5 fl oz
- Chopped Sage Leaves 3 tablespoons
- Onion 2 pieces
- Salt to taste
- Olive Oil 2 tablespoons
Step-by-Step Guide
Step 1
Prepare the anchovies by filleting, rinsing, and drying them.
Step 2
Place the fish in a bowl (not metal).
Step 3
Season with salt and pour over the white wine vinegar, then refrigerate for 24 hours.
Step 4
Before serving, pat dry with a paper towel, arrange on a plate, sprinkle with thinly sliced onions and finely chopped parsley, and drizzle with olive oil.
