Ingredients
- Wheat Flour 5 oz
- Baking Powder 1 tablespoon
- Milk 15 fl oz
- Butter 2 spoons
- Egg white 4 pieces
- Sugar 4 spoons
- Mascarpone Cheese Unagrande 10 oz
- Whole egg 2 pieces
- 10% cream 1 tablespoon
- Raspberry leaves to taste
- Powdered Sugar to taste
Step-by-Step Guide
Step 1
Sift the flour, sugar, and baking powder into a large mixing bowl.
Step 2
Mix the milk with the melted butter and add it to the dry ingredients.
Step 3
Whip the egg whites until stiff peaks form and gently fold them into the bowl. Mix carefully with a silicone spatula to prevent the batter from deflating.
Step 4
Cook the pancakes in a skillet greased with butter until golden brown.
Step 5
Cream. Whisk the egg yolks with 2 tablespoons of sugar until you have a white, creamy mixture. Add the cream and cheese, and mix well.
Step 6
Raspberry puree. Blend the raspberries with the remaining 2 tablespoons of sugar and strain the resulting puree through a sieve.
Step 7
Stack the pancakes on a plate, alternating them with cream and fresh raspberries. Finish the dish by dusting powdered sugar on top.
