Description
Pecorino cheese can be replaced with grated Parmesan.
Ingredients
- Guanciale 0 oz
- Passata Tomato Sauce 5 oz
- Onion 5 oz
- Green Tagliatelle Pasta 5 oz
- Red Grape Juice 0 fl oz
- Grated Pecorino Pepato Cheese 5 oz
- Mild Chili Spice to taste
- Garlic to taste
Step-by-Step Guide
Step 1
Boil water and cook the rigatoni pasta in salted water.
Step 2
While the pasta is cooking, prepare the sauce. Place fifty grams of guanciale in a heated skillet and sauté for a few minutes. Add the tomato sauce, draining excess fat from the skillet beforehand.
Step 3
Then add the onion, garlic, and chili pepper to the skillet. Next, add the wine and cheese. After a few minutes, you can remove the guanciale and chili. Keep the sauce on the heat for a few more minutes, stirring.
Step 4
Mix the sauce with the cooked pasta and serve, garnished with the remaining guanciale and grated pecorino cheese.
