Ingredients
- Unrefined Sunflower Oil 10 fl oz
- Garlic 0 oz
- Whole egg 1 piece
- Quail Egg 1 piece
- Dijon Mustard 1 teaspoon
- Lime Juice 1 teaspoon
- Flaky sea salt a pinch
- "Five Pepper Blend" a pinch
- Ground Black Pepper a pinch
- Ocean salt to taste
Step-by-Step Guide
Step 1
In a mortar, crush the garlic with the pepper blend and a pinch of coarse salt.
Step 2
In a deep bowl, add the yolks.
Step 3
Add the mustard.
Step 4
Whisk with a whisk.
Step 5
Add the garlic.
Step 6
Pour the oil into the deep bowl.
Step 7
Add the yolk mixture and blend with an immersion blender.
Step 8
Add the ground black pepper.
Step 9
Add the lime juice and whisk again. Adjust salt to taste.
