Ingredients

  • Olive Oil 2 tablespoons
  • Onion 2 heads
  • Garlic 4 cloves
  • Orange Bell Peppers 2 pieces
  • Canned Tomatoes (Pelati) 10 oz
  • Chicken Broth 8 cups
  • Ground Black Pepper ¼ teaspoon
  • Basmati rice ½ cup
  • Peanut Butter 5 oz

Step-by-Step Guide

Step 1

In a pot, heat the olive oil over medium heat. Add the finely chopped onion and diced peppers and sauté, stirring, for a few minutes until soft and golden. Then add the minced garlic and sauté lightly until fragrant.

Step 2

Add the tomatoes, broth, and black pepper. Bring to a boil, reduce the heat, and simmer for 30 minutes without covering.

Step 3

Add the rice and cook for another 15 minutes, covered, until the rice is tender.

Step 4

Remove from heat, add the peanut butter, mix well, and serve.
