Adjika with Saffron

Description
Adjika is an Abkhazian word that simply means 'salt.' Real adjika does not contain any tomatoes—only peppers, garlic, and spices. Be sure to work with the peppers while wearing gloves, as they are very spicy.
Ingredients
- Mild Chili Spice ½ kg
- Garlic 1½ heads
- Ground coriander ½ spoons
- Uchiko Suneli 2 spoons
- Salt 5 oz
- Saffron ½ spoons
Step-by-Step Guide
Step 1
Wash the peppers, dry them, and cut off the stems. Only the stems should be removed — all the seeds must be left inside, as they provide the main heat.
Step 2
Pass the peppers through a meat grinder twice.
Step 3
Peel the garlic and pass all the cloves through a meat grinder.
Step 4
Combine the pepper and garlic, add salt, ucho-suneli, coriander, and saffron, and mix well. The adjika is ready for immediate use or can be stored in jars.
