Ingredients

  • Courgette 0 lbs
  • Mild Chili Spice 1 piece
  • Garlic 4 cloves
  • Olive Oil 0 fl oz
  • Mint 0 oz
  • Grated Pecorino Pepato Cheese to taste
  • Salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Heat olive oil in a deep saucepan, then sauté the finely chopped garlic and chili pepper for a minute or two. Season with salt and pepper.

Step 2

Chop the zucchini coarsely, place the pieces in a saucepan, and sauté over medium heat for twenty minutes. Then pour in 300 ml of water (or chicken broth) and cook for an additional five to seven minutes.

Step 3

Remove the saucepan from the heat, add the chopped mint leaves. Taste and adjust seasoning with salt and pepper if needed.

Step 4

Using an immersion blender, puree the soup. Serve it mixed with grated pecorino cheese.
