Tomato Soup with Coconut Flakes

Ingredients
- Tomatoes 3 pieces
- Water 30 fl oz
- Coconut flakes 1 tablespoon
- Ginger 1 tablespoon
- Vegetable Oil 2 tablespoons
- Garlic 1 clove
- Salt to taste
- Cilantro to taste
- Mustard seeds 1 teaspoon
- Cinnamon ¼ teaspoon
Step-by-Step Guide
Step 1
Place the tomatoes in a pot and cover with water. Cover with a lid and cook the tomatoes until they are soft and the skin can be easily removed.
Step 2
Let them cool slightly. Place the tomatoes in a blender, add the broth, and blend until smooth.
Step 3
In a skillet, heat the oil, add the coconut flakes, ginger, garlic, cilantro, and spices (except for cinnamon). Heat the mixture for no more than 1 minute.
Step 4
Add the oil and spices to the blender with the tomatoes and blend again.
Step 5
Pour into bowls, add cinnamon, salt to taste, and stir.
