Zucchini puree soup with herbs
Ingredients
- Courgette 2 pieces
- Chicken Broth 1½ l
- Dried parsnip to taste
- Carrot 1 piece
- Salt to taste
- Ground Black Pepper to taste
- Dill to taste
Step-by-Step Guide
Step 1
Cook the chicken broth by adding chopped carrots, salt, pepper, and dried dill and parsley along with the chicken.
Step 2
Peel the zucchini and cut them into large pieces. If the zucchini are large, be sure to remove the core first. Place the chopped zucchini into boiling broth and simmer on low heat for about 10 minutes, until both the zucchini and carrots are completely soft.
Step 3
Strain the broth or remove the vegetables with a slotted spoon. Blend the vegetables in a blender until smooth. Divide the mixture into bowls, pour in the broth, and gently stir.
