Zucchini Fritters with Sour Cream and Garlic Sauce
Baking and Desserts • Russian
Description
On this day, God sent them sturgeon in champagne, zucchini salad, radish salad, and here are my fritters with sour cream sauce :-)) Dinner for two, they call it :-) I divided the batter into 2 portions, and in the second one, I added finely chopped bell pepper (not the foreign kind that sits in supermarkets all year round, flaunting its synthetic sides, but our local kind, available only in August and September). A couple of those peppers went into the second half of the batter.
Ingredients
- Courgette 3 pieces
- Corn Starch 2 tablespoons
- Chocolate eggs 3 pieces
- Wheat Flour 6 tablespoons
- Orange Bell Peppers 3 pieces
- 20% Sour Cream 5 oz
- Garlic 2 cloves
- Herbs 0 oz
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Grate the zucchini on a coarse grater (although, I think a fine grater would be better, but then everything needs to be grated finely, and I won't manage that).
Step 2
Drain the excess liquid.
Step 3
In a separate bowl, beat 3 eggs (I had size C1). Add them to the zucchini.
Step 4
Add 2–3 tablespoons of cornstarch, and 6–7 tablespoons of wheat flour (sifting it is essential). After mixing, you can determine if more flour is needed. Add 1 teaspoon of baking powder. I thought about grating some cheese into it, but I didn't want to weigh down the dinner.
Step 5
Fry immediately in a hot skillet with vegetable oil.
Step 6
For the sauce, wash and dry the herbs (I think Russian herbs like dill, parsley, and green onion work well). Chop finely and mix with sour cream. Add plenty of freshly ground pepper and salt to taste.
Step 7
Peel the garlic and press it into the sauce bowl.
Step 8
Mix the sour cream, herbs, and garlic in the sauce bowl. Remember, garlic is a vegetable of friendship. Everyone can enjoy it! :-)
