
Zucchini Fritters with Apple Topping

The peak harvest of apples and zucchinis occurs at the same time, so it makes sense to combine them in one dish. The level of 'fruitiness' can easily be adjusted to your taste. If you add more grated zucchini to the batter, you can enhance these fritters with nutmeg, pepper, and even garlic to highlight their vegetable essence. If you use more apple, feel free to add raisins and cinnamon to transform the fritters into a dessert. We used exactly half of each, and we also 'topped' one side of the fritters with a slice of apple for presentation. However, keep in mind that besides flavor, apples release a lot of juice, so the grated zucchini needs to be thoroughly squeezed to avoid making the batter too runny, which would require adding flour and compromise the delicate zucchini texture.
Ingredients
- Courgette 20 oz
- Apple 20 oz
- Ground Cinnamon a pinch
- Chicken Egg 1 piece
- Wheat Flour 5 oz
- Vegetable Oil 0 fl oz
- Baking Powder 1 tablespoon
- Lemon ½ pieces
- Salt a pinch
- Ground Black Pepper to taste
- White Balsamic Cream to taste
- Sour Cream to taste
- Sugar 0 oz
Step-by-Step Guide
Step 1
Peel the zucchini and grate it coarsely.
Step 2
Drain in a colander and squeeze well, gathering the pulp in handfuls.
Step 3
Grate the lemon zest using a fine grater.
Step 4
Peel the apples, cut them in half, and remove the cores.
Step 5
Slice 1 apple into rounds. Drizzle with lemon juice to prevent browning.
Step 6
Grate the remaining apples on a coarse grater, squeeze out the juice, and drizzle with lemon juice to prevent browning.
Step 7
Grate the zucchini and apples, then mix them with sugar, lemon zest, cinnamon, and salt.
Step 8
In a separate bowl, beat the egg with a fork and add it to the zucchini-apple mixture. Mix thoroughly.
Step 9
Add the sifted flour with baking powder to the mixture. Mix the dough thoroughly.
Step 10
Heat vegetable oil in a skillet and use a tablespoon to drop the batter into the pan in the shape of pancakes, spacing them apart.
Step 11
While the pancakes are browning on one side, place a slice of apple on the uncooked side.
Step 12
Carefully flip the pancakes to the other side and let them brown nicely. Serve the pancakes hot with a drizzle of balsamic vinegar, alongside sour cream, or with jam.
