  • Courgette 25 oz
  • Potato 1 piece
  • Olive Oil 1 tablespoon
  • Onion 1 piece
  • Garlic 2 cloves
  • Red Curry Powder 2 teaspoons
  • Coarse Salt 1 tablespoon

Step-by-Step Guide

Step 1

In a large saucepan, heat the olive oil over medium heat. Add the onion and a tablespoon of salt; sauté for 4–5 minutes, stirring occasionally, until softened. Add the garlic and sprinkle in the curry powder, cooking for 1 minute while stirring constantly until fragrant.

Step 2

Add the zucchini, potato, and 4 cups of water. Bring to a boil, reduce the heat, and simmer for 10–15 minutes until the vegetables are tender.

Step 3

In batches, blend the contents of the saucepan; serve immediately, or let cool and freeze in a tightly sealed container.
