Zucchini caviar with mayonnaise and tomato
Ingredients
- Zucchini 5 lbs
- Vegetable Oil 5 fl oz
- Tomato Paste 15 oz
- Mayonnaise 15 oz
- Salt 1 tablespoon
- Sugar 5 oz
- Citric Acid 0 oz
- Ground Black Pepper 0 oz
- Garlic 10 cloves
Step-by-Step Guide
Step 1
Grate 3 kg of peeled zucchini on a coarse grater.
Step 2
Add 0.5 cup of vegetable oil to the pot with zucchini.
Step 3
Simmer, stirring occasionally, over low heat for 1 hour.
Step 4
Add 450 g of tomato paste, 450 g of mayonnaise, 1 tablespoon of salt, and 0.4 cup of granulated sugar.
Step 5
Simmer for 40 minutes.
Step 6
Add 0.5 teaspoon of citric acid, 0.5 teaspoon of ground black pepper, and 10 minced garlic cloves.
Step 7
Simmer for 20 minutes.
Step 8
Pack into sterilized jars and seal. This recipe yields 6.5 half-liter jars.
